DIY Granola Bars

My son loves granola bars but after looking at the ingredients in the “healthy” ones, I was kind of astounded that some form of sugar was the #1 ingredient in most of them! So, I decided to make my own. Don’t get me wrong, he definitely still eats the store bought ones too, but it’s nice to switch it up here and there with these DIY ones too.

These DIY Granola Bars are: NO BAKE, PEANUT FREE, NO SUGAR ADDED & VEGAN (unless you add optional choc chips)!

Full Recipe for DIY Granola Bars (No Bake, Peanut Free, Vegan + Sugar Free***)

Ingredients:

  • 1/2 cup homemade applesauce (or sub for 1/4 cup honey)
  • 1/4 cup coconut oil
  • 1 1/2 cups oats
  • 1 cup puffed rice cereal
  • 3/4 cup unsweetened shredded coconut
  • 3/4 cup dates (pitted + chopped)
  • 1/4 cup sunflower seeds
  • 1/2 cup almond butter
  • 1 tsp vanilla
  • 1/2 tsp kosher salt
  • 1/2 tsp cinnamon
  • 1/4 cup chocolate chips (optional!)***

Preparation:

  1. To make your own applesauce, peel and quarter 1 apple. Boil until fork tender (about 6-8 minutes) then place in a blender and blend until smooth.
  2. Melt coconut oil and almond butter in the microwave for about 20 seconds, or until it’s pourable. Add all the ingredients to a large bowl and mix well.
  3. Line a baking dish with parchment paper and evenly spread out the mixture, pressing down firmly. Allow to chill in the freezer for 2 hours or in the fridge overnight. Cut into granola bars and enjoy! (I recommend keeping in the fridge or a cool place so they stay intact).
